Portugal - the cheapest way into Western Europe without sacrificing quality: Lisbon and Porto are gorgeous, the food and wine are excellent, and prices are noticeably lower than Spain, France, or Italy. Downside is it's not exactly a secret anymore, so peak-season Lisbon and Porto have gotten pricier and busier than a few years ago.

Thailand - the classic backpacker route for a reason: islands, jungle, temples, and legendary street food, all still doable on $30-40/day outside of Bangkok and the party islands. The counterargument is that Thailand isn't the screaming deal it was a decade ago - Bali and parts of Vietnam now undercut it on price for a similar vibe.
Georgia (the country, not the US state) - visa-free entry for many nationalities, remarkably cheap wine and food, dramatic Caucasus mountain scenery, and a currency that stretches a long way. It's less discovered than Southeast Asia or Latin America, though that also means less tourist infrastructure and more logistics to figure out yourself.
