Almond — Almonds aren’t technically nuts at all — they’re the seed inside a peach-like fruit’s pit. California grows about 80% of the world’s supply, requiring over a million trucked-in beehives each spring for the largest managed pollination event on the planet.

Cashew — The cashew nut grows outside a juicy “cashew apple,” dangling from the fruit like an afterthought. Its shell contains urushiol, the same skin-irritating oil found in poison ivy, which is why raw, unroasted cashews in the shell are never sold to consumers.

Pistachio — Ripe pistachio pods split open with an audible “pop,” earning the nut its Iranian nickname, the “smiling nut.” Naturally occurring potassium-40 makes pistachios mildly radioactive — enough to have set off radiation detectors at shipping ports.

Walnut — A shelled walnut’s wrinkled halves bear an uncanny resemblance to a human brain, which fed centuries of “doctrine of signatures” folklore claiming the nut boosted brainpower. The tree itself produces juglone, a chemical that poisons many neighboring plants trying to grow nearby.

Macadamia — Native to Australia’s rainforests, the macadamia has the hardest shell of any commercial nut, requiring roughly 300 pounds per square inch of force to crack. That toughness — plus a toxicity to dogs — helps make it one of the most expensive nuts in the world.

Pecan — The pecan is the only major tree nut native to North America, cultivated by both George Washington and Thomas Jefferson at their estates. It’s the backbone of the Southern pecan pie tradition, a dessert that didn’t become widely popular until corn syrup entered American kitchens in the early 1900s.

Hazelnut — Nutella alone accounts for roughly a quarter of the entire world’s hazelnut supply, with Italy consuming the lion’s share. The trees themselves are remarkably long-lived, with some cultivated hazel groves remaining productive for well over a century.

Brazil nut — Brazil nut trees rely almost entirely on large-bodied orchid bees for pollination, and their softball-sized pods are tough enough that only agoutis — sharp-toothed rodents — can gnaw them open to disperse the seeds. A single Brazil nut can pack over 100% of an adult’s daily recommended selenium intake.
